orange pineapple teriyaki salmon

as part of my new job as super nanny, i have taken on the role of house cook (i won’t call myself a chef until i have the degree).

i really lucked out with these kids – they will eat just about anything. as was making this last night the 4-year-old exclaimed “I LOVE SALMON!” i almost choked. when i was 4 i’m pretty sure i was throwing a hissy fit on my kitchen floor (probably half naked) screaming for more french fries. these kids are saints.

i got this recipe from cooking light. it’s so so easy to make that you probably have most of the ingredients in your cabinet already. serve it with some brown rice and lemon green beans.

ingredients:
2 tablespoons brown sugar
2 tablespoons low sodium soy sauce
1 teaspoon orange zest
6 oz pineapple juice
1/4 teaspoon salt
4 6oz salmon filets
evoo

directions:

combine first 5 ingredients in a small saucepan over high heat. bring to a boil. reduce heat, and simmer until reduced to 1/4 cup (about 15 minutes). set aside.

preheat oven to 400 degrees.

heat oil in a large skillet over medium-high heat. season salmon with salt and pepper on both sides. add fish to hot pan and cook 3 minutes. turn fish over and place in oven. bake at 400° for 3 minutes. remove from oven and brush 1 tablespoon sauce over each fillet. return to oven, and cook 1 minute or until fish flakes easily when tested with a fork or until desired degree of doneness.

mixed berry crumb bars

while i was out in sun valley, idaho last week i had a different version of these bars. we were on a white water rafting trip and the tour guide's wife made huckleberry bars for a lunchtime dessert. i took one bite and knew i needed to get home and recreate them.

the recipe is super easy and comes together pretty quickly - you don't even have to turn on your mixer for these guys. you can use any flavor or brand of store-bought jam, but just make sure it's good quality.

ingredients:
recipe from allrecipes.com

1/2 cup butter, softened
1/2 cup packed brown sugar
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1 1/2 cups rolled oats
1 1/2 cups any flavor fruit jam (i used mixed berry)

directions:

preheat oven to 350 degrees and grease a 9x13 inch pan.

in a large mixing bowl, combine the butter, brown sugar, flour, baking soda, salt and rolled oats. press 2 cups of the mixture into the bottom of the prepared pan. spread the preserves over the top and sprinkle with the remaining crumb mixture, gently pressing crumbs into jam.

bake for 35 to 40 minutes. allow to cool and cut into mini squares.

nyc bound

exciting news.

after two years of debating, internal struggle, major setbacks, sleepless nights and being scared sh*tless i've finally decided to do what i always knew i should.

i'm sending myself to culinary school in nyc.

today is moving day and i'm headed up to nyc to become an official city gal.

i'll be a nanny by day and a culinary student by night.

stay patient with me. posts on pb&kelly might be a little sparse at first as i'm adjusting to my new home/job. i'll be traveling a lot with the family this summer (we're going to sun valley, idaho today for 10 days) but hopefully i can find some blogging time.  i also just bought a new slr camera that i can't wait to try out.

anywho, that's my news.  thanks to everyone for the unwavering support you've given me throughout this long decision process (you know who you are). i couldn't have done it without you.

sorry for being so sappy. i'm hungover and feeling emo :)
